Make This Recipe

Ingredients

12 oz. herb-seasoned stuffing mix

1.5 cup salted butter

1 cup diced white onion

1 cup diced celery

24 oz. chicken stock

5 Eggland’s Best Eggs, large

16 oz. tube of uncooked Maple sausage

Kosher salt

freshly cracked pepper

2 tbsp. Poultry seasoning

Preparation

  1. Preheat the oven to 350°F.
  2. Grease a 12x8 inch glass baking dish with nonstick spray or butter. Meanwhile, add 3-4 cups of water in a pot and bring to a boil.
  3. Once the water is boiling, add the eggs and cook for 8 minutes.
  4. Remove and place in ice water for five minutes before peeling.
  5. To prevent a rubbery texture, add diced eggs into a food processor and pulverize for 30 seconds.
  6. In a large saute pan, cook sausage over medium heat for about 10 minutes, until browned and cooked through. Use a spatula to break up the sausage into smaller pieces. Drain and place to the side.
  7. In a separate skillet, melt 4 tbsp. of butter over medium-high heat. Add diced onions and celery. Sauté until fragrant and tender.
  8. Melt one stick of butter and chicken stock in a saucepan.
  9. Combine dry stuffing, seasonings, onions, celery, eggs, and sausage in a large mixing bowl.
  10. Add all liquids into the mixture and fold into ingredients. Transfer stuffing to glass baking dish.
  11. To achieve a crunchy coating, add a few pats of butter to the top. Bake for 30 minutes.
